After our nice swim and snorkel experience we retreated to Amory's for some lunch. Here is Kate serving Eileen the pasta (but, of course) but we also had sandwiches and dessert and great Italian coffee.
Doesn't it look yummy. It is fresh tomatoes in olive oil sprinkled with ricotta dura (which is a hard ricotta cheese you can grate) and served on whole wheat pasta. This dish is very common in southern Italy in the summer because the only thing cooked is the pasta...the tomatoes soften a bit with the heat of the noodles but it tastes so fresh!
Well, our first taste wasn't yum...It was more like "what is missing here???" so we added some powdered sugar and then it was most definitely, YUMMMMMM! I find that recipes are a diving board from which you can launch your own taste preferences. As for this recipe...we will now always add powdered sugar, or icing sugar as Kate says, she is from Australia.
