Vegan Chili

Eileen is checking out the vegan lifestyle. She has been vigilant for about two weeks now. This is a new cooking adventure for me so I thought I would share some of my findings. Today was a chilly day and we had a little rain so I thought of making tofu chili. It came out pretty tasty, thanks to two envelopes of taco seasoning I had stashed away.

The tofu crumbled and we added beans, onions, garlic, peppers and tomato sauce.

It looks just like we think chili should and it was mighty yummy with the taco seasoning and some extra chili powder. Yummmm.
